The Tunisian DudeHomemade street food
Our story

A blue village,
a Halifax winter.

The Tunisian Dude started with a stubborn idea: that Halifax deserves the food you actually eat in Tunis — not a polite, toned-down version of it.

Our kitchen grew out of the narrow streets of Tunis and the blue-and-white cliffs of Sidi Bou Said, where breakfast smells like frying dough, harissa and coriander before you're properly awake. Fricassé from a paper bag. Baguette farcie eaten standing up. Makloub folded to order while you wait and pretend you're not staring.

We brought all of it to Fenwick Street. The dough is mixed and folded here every morning. The harissa is ground here. The signature sauce recipe is not going on the internet, so please stop asking nicely — it's working, but stop.

“Every dish tells a story. Some of them are about how much sauce is too much sauce.”— The Tunisian Dude

Today we feed students from Dal, SMU, NSCAD, MSVU and King's; residents of the Templeton buildings; office lunches; and anyone who wanders in off Fenwick because something smelled correct. Everything is halal. Everything is made to order. Sundays we sleep.

Non-negotiables

Four things we
refuse to cheapen

Made this morning

Dough mixed daily, harissa ground in-house, produce bought local. Nothing arrives here already assembled.

Community first

Students see the price they pay with tax already in it, residents get delivery to the Templeton buildings, and a counter where the owner actually knows your order.

Real Tunisian heat

Harissa is not a garnish. You choose the level from 0 to 5, and level 5 means it.

Tunisian spices, Canadian everything else

Only the spices travel from Tunisia. The meat, the produce, the bread and the drinks are Canadian, bought local first — the DNA is Tunisian, the soul is Canadian.

Orion: the AI system
that runs our kitchen

Most restaurants buy four different systems that refuse to talk to each other. We wrote one that does everything, and it happens to run this website too.

Menu & pricing

One source of truth for dishes, photos, prices, spice levels and availability — pushed by API to the website, the ordering app and the counter screen.

Stock & prep

Tomorrow's prep list and reorder points are calculated from what actually sold today, not from a guess on a whiteboard.

Orders & tickets

Online, in-store and delivery orders land on one ticket rail with timing, so the line never argues about what came first.

Staffing & shifts

Rosters built around forecasted demand — busy Friday nights get bodies, quiet Tuesdays don't burn payroll.

Pricing tiers

Student, resident and public pricing all resolved automatically at checkout after email verification. Student prices are shown tax-inclusive. No manual discounts, no arguing at the counter.

Daily brief

Sales, margins, waste and top sellers summarised every morning — in plain language, not a spreadsheet nobody opens.
